Automation Is Changing Bakery Work. Safety Has to Change With It.

Walk onto the floor of a modern commercial bakery today, and the work may look very different than it did just a few years ago.

You can see the changes right away. Robotic palletizers may be stacking finished product at the end of the line. Automated mixers may be handling the kind of heavy, repetitive work that leaves people sore by the end of a shift. High-speed packaging equipment may be running continuously, with sensors and controls helping keep everything on track.

Automation can take some of the hardest physical work off employees’ shoulders. It can reduce heavy lifting, awkward reaching, repetitive movement, and constant manual handling. It can also help bakeries improve consistency, reduce bottlenecks, and keep production moving when staffing is tight.

The trend is not slowing down. PMMI’s 2026 Robotics in US Packaging & Processing Report found that the U.S. robotics market serving packaging and processing was worth more than $440 million in 2025 and is projected to reach about $800 million by 2031, a 10.3% compound annual growth rate.

Commercial bakeries are already part of that shift. Commercial Baking recently covered Boston Baking’s use of an AI-driven robotic palletizer in its packaging area, and also reported on the company’s broader investment in new equipment, including mixers, depositors, and a sheeter. That is the direction the industry is moving and more automation is coming.

But automation does not make operational risk disappear. It changes where that risk shows up. When manual tasks are turned over to machines, safety starts to depend more heavily on how employees interact with that equipment during cleaning, monitoring, adjustments, maintenance, and repairs. Products still get jammed. Sensors still fail, lines stop, and that pressure to get it moving again is often where safety gets tested. 

A small shortcut around moving equipment can become a serious injury. That is why safety programs have to evolve alongside plant technology.

New equipment should not be treated as only a production decision. It is also a training decision, a maintenance decision, and a workflow decision. The people working around these machines every day need clear boundaries around what they can touch, what they should not touch, and when they need to stop and call someone with the right training.

Every operator should understand the basics.

  • Who is authorized to clear a jam?
  • When does the equipment need to be fully shut down?
  • What is the lockout/tagout procedure?
  • How should the equipment be cleaned safely?
  • Who handles adjustments or repairs?
  • Where are the emergency stops?
  • What should happen if a machine stalls mid-cycle?

These are not small details. They can be the difference between a safe shift and a serious injury. OSHA’s bakery equipment standard applies to the design, installation, operation, and maintenance of machinery and equipment used within a bakery. The same regulation also addresses machine guarding, and OSHA’s lockout/tagout guidance emphasizes the need for specific energy-control procedures when machinery is serviced or maintained.

While these concepts aren't new, the equipment may be. A new machine may change how employees move through the space. It may create different pinch points. It may change sanitation routines. It may require different maintenance skills. It may put employees closer to automated arms, high-speed conveyors, computerized controls, or moving parts in ways the old process did not.

One of the useful points in PMMI’s robotics research is that automation is not just about the equipment itself. Workforce development, maintenance skills, training, and post-installation support are all part of the picture. The equipment may be new, but people still have to work around it every day. They still have to clean it, monitor it, troubleshoot it, and make decisions when something does not go as planned.

For bakeries adding automation, safety should be part of the conversation early. Before a new line is fully up and running, it is worth reviewing machine guarding, lockout/tagout procedures, sanitation protocols, maintenance workflows, emergency stops, employee training, and floor traffic patterns.

Automation can help a bakery run faster and more efficiently. It can reduce strain on employees, improve consistency, and support growth. But new technology works best when the people around it understand the hazards, know their boundaries, and have clear procedures when something goes wrong.
