This past year has seen many trends in the baking industry, from unique pastry items to more nutrition-focused items. Here are some of the top baking trends we saw in 2013, in no particular order.

Croissant-Doughnut combinations. “Cronuts” were originally developed by chef Dominique Ansel for his bakery in New York City. The bakery trademarked the name in May 2013, but imitation versions have sprung up in major cities across the U.S., and there have been prior versions of the treat as well.  In fact, one bakery owner in Ohio trademarked the “doughssant”, an item he said he came up with in the 1990s.

Cupcakes. This trend has been around for a few years now, however despite people calling the cupcake trend “just a fad”, they still stand strong as one of the top desserts sought out by customers in bakeries. More and more “cupcakeries” are popping up all over the U.S. Major cupcake retailer Sprinkles even developed a “cupcake ATM machine” in Beverly Hills, which eventually spread to other cities in the U.S.

Cake Pops. This is another trend that has actually been around for a couple of years, and was originally created by a woman named Angie Dudley. 2013 has seen an expansion in flavors and themes of these little treats. Cake Pops are a great option for people who just want a quick, convenient sweet without needing to feel guilty about eating an entire piece of cake. These have been popping up in coffee shops as well as bakeries.

Gluten Free or Sugar Free Items. The past couple years have seen a shift in nutritional awareness. Not only are consumers trying to cut back on their calorie intake, they are more interested in sugar free items, or for those who have a wheat intolerance, gluten free items.
